Fava served with efta zymo rusks

Our heritage.

The traditional recipes of our own Marika, wife, mother, grandmother that highlight the real flavour of our rusks!

for this recipe, we suggest
INGREDIENTS

For the fava:

  • 300 g fava beans
  • 1 large onion
  • 1 garlic clove
  • 1 litre of water
  • 4 tablespoons of olive oil
  • Salt
  • Pepper

For serving (per serving):

  • 1/2 spring onion
  • 2 teaspoons of paprika
  • 3 teaspoons of capers
  • 1/2 lemon
  • 3-4 “the Manna” efta zymo rusks
EXECUTION

Soak the beans for about 1 hour.

Cut the onion and garlic into chunks.

In a saucepan, add olive oil and sauté onion and garlic on a medium heat for 5-6 minutes.

Add the beans and water. Mix. Allow to boil for about 1 hour on a medium heat. When the beans have softened, blend them in a blender.

Serve the beans on to a plate. Chop the spring onion and put it in a bowl with the capers.

Stir in the lemon, add salt and stir.

Add the mixture to the beans as well as paprika.

Finally, add as much extra olive oil as you want.

Serve with 4-5 rusks or choose any other the “the Manna” Tsatsaronakis rusk of your choice.
