Warm salad with broccoli, beetroot and haloumi
INGREDIENTS
  • 4-5 “the Manna” Small soft wheat rusks
  • 100 g of Haloumi cheese
  • 1 beetroot
  • 6 broccoli florets
  • 10 spinach leaves

For the dressing:

  • 5 tablespoons of olive oil
  • 1/2 lemon
  • 11/2  tablespoon of mustard
  • 1 teaspoon of apple vinegar
  • 1 teaspoon of honey
  • A pinch of thyme
  • Salt
  • Pepper
EXECUTION

In a saucepan, add water and salt. As soon as it starts to boil, add the broccoli and boil for about 7-10 minutes.

The beetroot can be bought ready cooked or boiled in a saucepan for 40 minutes. Cut into slices.

Wash the spinach thoroughly.

Cut haloumi into slices.

At the same time in a pan, heat the haloumi through for 2 minutes on each side.

Prepare the dressing by placing all the ingredients in the blender or mixing them with a whisk.

Put all the ingredients in a bowl.

Add the wheat rusks and mix.
