Barley rusk Dakos with arugula, avocado and smoked salmon
for this recipe, we suggest
INGREDIENTS
  • 1 “the Manna” barley rusk
  • arugula
  • ½ avocado
  • Smoked salmon
  • 1 tablespoon of apple vinegar
  • 3 tablespoons of olive oil
  • 1 teaspoon of mustard
  • Salt
  • Pepper
EXECUTION

Mix the olive oil, apple vinegar, mustard and salt in a bowl.

Add the arugula and mix.

Using a teaspoon, add a few “spoonfuls” of the avocado.

Hold the rusk momentarily under the tap and gently add water to both sides. Using a towel or kitchen roll, dry the rusk for 1-1.5 minutes until all the extra moisture has been removed.

Place the rusk on a plate and pour olive oil and the mixture that we have made above over it.

Finally, place the smoked salmon on the top along with some freshly ground pepper.
